What Cuts of Beef Are Best for Beef Tips in Gravy?

You can make very lean or tough cuts of beef tender with an Instant Pot pressure cooker or a slow cooker. So for this beef tips with gravy recipe, you can use lean chuck roast, sirloin tip, eye of round, or your preferred cut of lean beef.

  • Chuck Roast is an inexpensive cut of meat that’s often on sale. It has some marbling for flavor, and it’s flat, which makes it easy to brown.
  • Sirloin Tip (or round tip) is cut from the hindquarters, next to the sirloin. Asirloin tip has lots of flavor.
  • Eye of Round comes from the rear leg. It’s lean and tough but really flavorful.

This recipe uses Gravy Master, which enhances the natural flavors and appearance of gravies, meats, stews, fish, poultry, and vegetables. It isn’t super common, but Gravy Master helps add a little something to this recipe.

How to Make Tender Beef Tips and Gravy

  1. Cut, season, and flour the beef:
    1. Combine flour, salt, and pepper in a small bowl.
    2. Cut and trim roast into small bite-sized pieces.
    3. Dredge beef pieces in seasoned flour shake off excess flour.

    1. Set the Instant Pot to sauté and add oil.
    2. When the oil has heated drop in several pieces of the beef. Do not add all the beef at once.
    3. Cook seasoned beef in batches on all sides until lightly browned.
    4. When all of the beef is cooked, add it back to the Instant Pot.
    5. Add onion, Gravy Master, and beef stock.
    6. Place lid on Instant Pot and cook on high pressure for 15 minutes. Release pot after cooking with either a quick release or a natural release.
  3. Slow Cooker Directions:
    1. Brown the seasoned floured beef in a large skillet in small batches with some vegetable oil.

    3. Add onion, Gravy Master, and beef stock.

    5. If the liquid hasn’t thickened up to your desired consistency, you can thicken it up by mixing 1 tablespoon of butter and 1 tablespoon of flour. Stir this into the gravy and it will thicken up.

Ingredients

  • 1 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 pounds lean chuck roast
  • 48 ounces beef stock
  • 1 tablespoon vegetable oil
  • 2 teaspoons gravy master
  • 1 cup onions chopped
  • 16 ounces noodles or rice for serving

  • Set the Instant Pot to saute, add oil. When the oil has heated drop in several pieces of the beef. Cook seasoned beef on all sides until lightly browned. Cook beef in small batches. When all of the beef is cooked add it back to the Instant Pot.

  • Add 1 cup of onion, two teaspoons of Gravy Master, and beef stock. Place lid on high and cook for 15 minutes on high pressure. Release pot after cooking with either a quick release or a natural release.

Slow Cooker Directions

  • Brown the beef in a large skillet in small batches with some vegetable oil. Add the browned beef, beef broth, onion, and Gravy Master to the slow cooker. Cook for 4 to 6 hours on low.

  • If the liquid hasn't thickened up to your desired consistency, you can thicken it up by mixing 1 tablespoon of butter and one tablespoon of flour together. Stir this into the liquid and it will thicken up the gravy in the slow cooker.

      I am not sure if you mean that there isn’t enough liquid for the InstantPot (only 1 cup is require), or if you feel that isn’t enough liquid for the recipe. The meat also releases water as it cooked.

      Noodles take much less time to cook, this would have required cooking, then a release, then a second cooking. For me, I thought it was easier to simply cook the noodles on the stove in tandem so everything would be ready more quickly.

    This recipe was delicious. I too cooked it in the crockpot. I only filled it with water till the 2lbs of stew meet was covered, I omitted the salt, put in 1/2 a large white onion, and the 1/4 c. worscheshire and low sodium soy sauce. It smelled great cooking day. Right before we ate it I added just the brown gravy pack with no water and it thickend up quite nicely. The was a great meal. My husband is asking for seconds.

    I know you are paid to push the Instant Pot, but most people don’t use that or a pressure cooker. I rarely ever use a slow cooker. The slow cooker is a pain, because you still need to use another large pan to sear meats, creating just another big item to wash. Seems like your main thrust is pushing these products. Tell us how you ever fixed these recipes before using an Instant Pot, Pressure Cooker or Slow Cooker. That’s the basics of cooking.

I really just love this pot, and folks request these recipes. So I develop recipes for them. I really use the pot about once a week for my personal use. I am sorry if you feel I am trying to push the Instant Pot on you, no worries, I have at least 1,500 other recipes that do not require an Instant Pot.

      One of the reasons I like the Instant Pot is that you can sear inside of pot, and you can pressure cook, slow cook, make yogurt, make rice, and a couple of other things with it. I totally understand you aren’t sold on it.

      I am writing these recipes for the Instant Pot in many of them I give alternative directions for a slow cooker. So I feel like I have that covered. Again, the post wasn’t sponsored, it is me just loving a product and sharing the recipes that I write to my audience.

        I have an instant pot and love it. I find new recipes and old all the time to make good use of it. It’s fast easy to clean and if you get the right one Browns items before you pressure cook them all in the same pot. Usually around $100.00 and if you find ways to make it work for you worth every penny!

      What is the Instant Pot? Sounds like one I would love to have and use. I’m going to try the beef tips and gravy. Yes it is one of my comfort foods. I’m 56 and my grandma made them all the time. YUM. I will search for the instant pot, but if you could send me some information I would greatly appreciate it. I get most of my small appliances from Amazon.

      I’m wondering why you don’t just move on and find another website for your recipes if you’re going to be so critical of this one’s author. I am very impressed that Stacy was so polite in her response. Personally I use my crockpot at least once a week for a variety of recipes, none of which require anything other than dumping everything in.

      Please use the same ingredients as listed below. For this recipe season your flour as mentioned in the recipe, then brown the meat in a large skillet in small batches with some vegetable oil. Add the beef broth you will simmer for 4 to 6 hours on low. If the liquid hasn’t thickened up to your desire, you can thicken it up by mixing 1 tablespoon of flour and one tablespoon of flour that has been mixed. Stir this in, and this should thicken the sauce.

        This looks good and sounds good too. I’d use my slowcooker or that other pot where you can brown meat, simmer, slow cook, roast. Can’t think of the name of it. I noticed an error in the directions for thickening the gravy when using the crock pot. I believe it should be 1 tbls. of flour and 1 tbls of butter, not 1 tbls of flour and 1 tbls of flour. It appears the same way in the general directions. I use this little trick from time to time if necessary. Thanks for sharing.
